And then there are mornings when we want something that makes the entire kitchen smell like brown sugar, cinnamon, butter, and vanilla before the coffee has even finished brewing. ☕🍞
That is exactly where this Cinnamon Roll Bread Loaf comes in.
Imagine everything we love about a warm cinnamon roll—the buttery cinnamon filling, soft bread, sweet vanilla glaze, and irresistible bakery aroma—tucked into one beautiful, sliceable loaf.
No individual rolls to shape.
No wrestling with twelve pieces of dough.
No wondering why three cinnamon rolls somehow became gigantic while the others look like they gave up halfway through proofing. 😄
Instead, we get one impressive loaf with ribbons of Watkins Organic Ground Cinnamon, brown sugar, butter, and Watkins Original Gourmet Baking Vanilla® running throughout.
Slice into it while it is still slightly warm, drizzle that vanilla glaze over the top, and suddenly breakfast feels like a special occasion.
Our homemade cinnamon roll bread works beautifully for weekend breakfast, brunch, holiday mornings, afternoon coffee, Christmas breakfast, Thanksgiving weekend, homemade food gifts, or simply those mornings when cereal absolutely won’t cut it.
And yes—the smell alone may bring people into the kitchen asking, “What are you making?”
Consider that part of the recipe. 😉
What Is Cinnamon Roll Bread Loaf?
Cinnamon Roll Bread Loaf combines the flavor of traditional cinnamon rolls with the convenience and presentation of a homemade bread loaf.
Instead of cutting the dough into individual cinnamon rolls, we roll the dough with a generous layer of buttery cinnamon-brown sugar filling, shape it into a loaf, and bake it in a standard loaf pan.
The result is a soft, slightly sweet bread with beautiful cinnamon ribbons running through every slice.
Then comes the finishing touch:
Vanilla glaze.
Because technically we could stop at the bread.
But why would we do that to ourselves?
The glaze melts slightly over the warm top of the loaf, settling into the cracks and cinnamon swirls and giving us exactly the sweet finish we expect from a good cinnamon roll.
Why We Love This Homemade Cinnamon Roll Bread
This recipe has a lot going for it.
First, it looks impressive without requiring advanced bread-making skills.
Once sliced, those cinnamon ribbons give the loaf that gorgeous bakery-style appearance that makes everyone think we have been secretly training with a pastry chef.
We will graciously accept the compliments. 😎
We also love this recipe because it is:
- Soft and fluffy
- Packed with cinnamon flavor
- Buttery without being overly heavy
- Easy to slice and serve
- Perfect for breakfast and brunch
- Freezer-friendly
- Great for holiday gifting
- Delicious warm or at room temperature
- Made with everyday baking ingredients
- Easy to prepare ahead
And unlike traditional cinnamon rolls, a loaf is especially convenient when we are entertaining.
We simply slice it, arrange the pieces on a platter, set out coffee or tea, and breakfast is ready.
The Watkins Ingredients That Give This Cinnamon Bread Its Flavor
Cinnamon bread is one of those recipes where we cannot hide behind twenty different flavors.
The cinnamon and vanilla have to be good.
They are doing most of the heavy lifting.
For this recipe, we use Watkins Organic Ground Cinnamon in the swirl.
Watkins Organic Ground Cinnamon is a Cassia cinnamon, giving the bread the warm, sweet, familiar cinnamon flavor most of us associate with cinnamon rolls, coffee cakes, apple pies, and holiday baking.
Then we add Watkins Original Gourmet Baking Vanilla® to the bread and glaze.
Watkins describes this baking vanilla as a lower-alcohol formula made with pure vanilla extract and designed to retain flavor during baking or freezing.
That makes it especially handy for a recipe like this one, since we use vanilla in both the dough and the finishing glaze.
Cinnamon brings the warmth.
Vanilla rounds everything out.
Brown sugar joins the party.
Butter refuses to be left out.
And now we have a situation. 😋

Exactly how we like it. ⭐
How to Make Cinnamon Roll Bread Loaf
Step 1: Warm the Milk
Heat the milk until warm but not hot.
Aim for about 105°F to 115°F.
If the milk is too hot, it can damage the yeast.
If it is too cool, the yeast may take forever to wake up.
And nobody invited sleepy yeast to breakfast.
Stir the yeast and a teaspoon of the granulated sugar into the warm milk.
Let it sit for approximately 5 to 10 minutes, until it becomes foamy.
That foam tells us the yeast is active.
Step 2: Prepare the Dough
In a large mixing bowl, combine approximately 3 cups of flour, the remaining sugar, and salt.
Melt the butter and allow it to cool slightly.
Add the warm milk-and-yeast mixture, melted butter, egg, and Watkins Original Gourmet Baking Vanilla® to the dry ingredients.
Mix until a shaggy dough forms.
If using a stand mixer, switch to the dough hook and knead for approximately 6 to 8 minutes.
If kneading by hand, turn the dough onto a lightly floured surface and knead approximately 8 to 10 minutes.
The finished dough should feel soft, smooth, and slightly tacky.
Do not keep dumping flour into it until it feels completely dry.
That is one of the quickest ways to end up with dense bread.
A soft dough gives us a softer loaf.
Step 3: Let the Dough Rise
Place the dough in a lightly greased bowl.
Cover with a clean kitchen towel or plastic wrap.
Let it rise in a warm area for approximately 60 to 90 minutes, or until doubled in size.
The exact time depends on your kitchen temperature.
A warm kitchen may move things along quickly.
A chilly kitchen may make the dough take its sweet time, like it has nowhere important to be.
Step 4: Make the Watkins Cinnamon Filling
While the dough rises, prepare the filling.
Combine:
Brown sugar, Watkins Organic Ground Cinnamon, flour, and salt.
The small amount of flour helps absorb some of the melted butter and sugar during baking, reducing the chance that all our delicious cinnamon filling escapes to the bottom of the loaf pan.
Once the dough has risen, gently punch it down.
Roll it into a rectangle approximately 9 x 15 inches.
Spread the softened butter over the dough, leaving about a ½-inch border around the edges.
Sprinkle the cinnamon-brown sugar mixture evenly over the butter.
Be generous.
This is not the moment for timid cinnamon application.
Step 5: Roll and Shape the Cinnamon Bread
Starting from one short end, roll the dough tightly into a log.
Pinch the seam closed.
At this point, we have two shaping options.
For the easiest loaf, place the cinnamon roll log directly into a greased 9 x 5-inch loaf pan.
For a more dramatic swirled appearance, carefully slice the log lengthwise, leaving approximately one inch attached at the top.
Twist the two sections around each other with the cut cinnamon layers facing upward.
Then gently place the twisted loaf into the pan.
That exposed cinnamon swirl creates a beautiful bakery-style top.
And yes, it looks fancy.
No, we do not have to tell anyone it was surprisingly easy.
Step 6: Let the Loaf Rise Again
Cover the loaf and let it rise for approximately 30 to 45 minutes.
The dough should become noticeably puffy.
During the last part of the rise, preheat the oven to 350°F.
Step 7: Bake the Cinnamon Roll Bread
Bake for approximately 35 to 45 minutes.
The top should become golden brown.
If it begins browning too quickly, tent the loaf loosely with aluminum foil.
The center should register around 190°F on an instant-read thermometer when fully baked. Let the bread cool in the pan for about 10 to 15 minutes.
Then transfer it to a wire rack.
Step 8: Make the Vanilla Glaze
Whisk together:
- Powdered sugar
- Milk or heavy cream
- Watkins Original Gourmet Baking Vanilla®
- Pinch of salt
Start with two tablespoons of milk.
Add more only as needed.
We want a glaze that is thick enough to cling to the bread but thin enough to drizzle beautifully down the sides.
Drizzle the glaze over the slightly warm loaf.
And now comes the hard part.
Trying not to cut an enormous slice immediately.
Good luck with that. 😂
How to Get a Beautiful Cinnamon Swirl
The signature feature of cinnamon swirl bread is that gorgeous ribbon running through each slice.
A few tricks help keep the filling exactly where we want it.
Keep the Butter Soft, Not Melted
Melted butter can make the cinnamon sugar mixture too liquid during baking.
Softened butter creates a thicker paste between the dough layers.
Add a Little Flour to the Filling
That tablespoon of flour may seem insignificant, but it helps stabilize the filling.
Roll the Dough Snugly
Loose rolling can create giant air gaps inside the loaf.
We want the roll snug—but not crushed.
Do Not Overfill
We know.
This advice hurts.
More cinnamon sugar seems like it should automatically equal more happiness.
But too much filling can leak out or create large gaps between layers.
This recipe gives plenty of cinnamon flavor without overwhelming the bread’s structure.
Why Is My Cinnamon Bread Dry?
Dry cinnamon bread usually comes down to one of three things:
Too much flour, overbaking, or improper measuring.
When measuring flour, spoon it into the measuring cup and level it rather than packing it in.
Better yet, use a kitchen scale if you have one.
When kneading, resist adding too much flour.
The dough should remain slightly tacky.
Finally, begin checking the loaf near the lower end of the baking time.
Bread can go from perfectly soft to “why do we suddenly have a cinnamon brick?” faster than we would like.
Can We Make Cinnamon Roll Bread Ahead of Time?
Absolutely.
This recipe is particularly useful during busy fall and winter mornings.
We can prepare the loaf through shaping, cover it tightly, and refrigerate it overnight.
The next morning, remove it from the refrigerator and allow it to sit at room temperature until slightly puffy.
Then bake as directed.
That means most of the work is finished the night before.
Future-us wakes up, turns on the oven, makes coffee, and looks impressively organized.
We support future-us. ☕🙌🏾
Cinnamon Roll Bread for Thanksgiving Morning
Thanksgiving morning can become hectic quickly.
Turkey prep.
Side dishes.
Desserts.
Guests arriving.
Someone asking where the serving spoon is.
Someone else opening the oven every five minutes.
This loaf gives us an easy breakfast we can prepare ahead.
Make the dough Wednesday evening.
Shape the loaf.
Refrigerate overnight.
Bake Thanksgiving morning.
Serve thick slices with coffee, tea, fruit, or scrambled eggs.
Everybody gets breakfast without us turning Thanksgiving morning into another full cooking production.
Make-Ahead Cinnamon Bread for Christmas Morning
Christmas morning may be an even better excuse for cinnamon roll bread.
The smell alone fits the occasion.
Cinnamon.
Butter.
Brown sugar.
Vanilla.
Coffee brewing nearby.
That is basically Christmas morning announcing itself through the kitchen.
Prepare the loaf on Christmas Eve, refrigerate overnight, and bake it the next morning.
Or bake the loaf completely several days earlier and freeze it.
Add the glaze after reheating for the freshest presentation.
How to Freeze Cinnamon Roll Bread
Cinnamon bread freezes beautifully.
Allow the loaf to cool completely.
Do not glaze it if you plan to freeze the entire loaf.
Wrap tightly in plastic wrap.
Then wrap it in aluminum foil or place it in a freezer-safe bag.
Freeze for about 2 to 3 months.
For individual servings, slice the loaf before freezing.
Place parchment between the slices.
Then we can grab one whenever the cinnamon-roll craving hits.
Which, conveniently, tends to happen whenever coffee is nearby.
Cost-Saving Tips for Homemade Cinnamon Bread
One of the best things about homemade sweet breads is that they can deliver bakery-style results without bakery-style prices.
Buy Flour and Sugar in Larger Packages
If we bake frequently during fall and the holiday season, larger bags of flour and sugar often reduce the cost per recipe.
Buy Yeast in a Jar
Individual yeast packets are convenient, but frequent bread bakers may save money buying yeast in a jar and measuring what they need.
Store it according to package directions to maintain freshness.
Use Watkins Baking Ingredients Across Multiple Recipes
Watkins Organic Ground Cinnamon and Watkins Original Gourmet Baking Vanilla® are not ingredients we buy for one recipe and forget about.
We can use them throughout holiday baking in:
- Apple crisp
- Cinnamon rolls
- French toast
- Muffins
- Coffee cake
- Snickerdoodles
- Banana bread
- Pumpkin bread
- Sweet potato pie
- Bread pudding
- Pancakes
- Waffles
- Holiday cookies
That makes stocking our baking cabinet before peak holiday season much more practical.
Cinnamon Roll Bread Variations
Once we master the basic loaf, we can take it in plenty of delicious directions.
Apple Cinnamon Roll Bread
Add a thin layer of finely diced, sautéed apples over the cinnamon mixture.
Keep the pieces small so the loaf remains easy to roll.
Pecan Cinnamon Bread
Sprinkle ⅓ cup finely chopped toasted pecans over the filling.
We get a little crunch with every cinnamon swirl.
Raisin Cinnamon Bread
Add approximately ½ cup raisins.
Soak them briefly in warm water and drain thoroughly before using so they stay plump during baking.
Maple Cinnamon Bread
Replace part of the milk in the glaze with pure maple syrup.
Cinnamon + maple + vanilla?
That trio knows exactly what it is doing.
Cream Cheese Glazed Cinnamon Bread
Beat softened cream cheese with powdered sugar, milk, and vanilla.
Spread it over the loaf instead of using the traditional powdered-sugar glaze.
At that point, we have wandered deliciously close to cinnamon-roll territory.
Nobody is complaining.
What to Serve with Cinnamon Roll Bread
This loaf can easily be the star of breakfast, but it also plays well with others.
Serve it alongside:
- Scrambled eggs
- Bacon
- Breakfast sausage
- Fresh berries
- Yogurt
- Fruit salad
- Hot coffee
- Chai tea
- Hot cocoa
- Apple cider
- Vanilla latte
For a holiday brunch, arrange sliced cinnamon bread on a wooden serving board surrounded by fruit, nuts, butter, and small bowls of jam.
It looks impressive without requiring complicated plating.
Pro Kitchen Hack: Make a Holiday Baking Station

- Watkins Original Gourmet Baking Vanilla®
- Flour
- Granulated sugar
- Brown sugar
- Powdered sugar
- Yeast
- Baking powder
- Baking soda

Now when the holiday baking mood strikes, we are not digging through six cabinets looking for cinnamon we could have sworn we bought last week.
Holiday baking becomes much easier when the ingredients are already waiting.
Frequently Asked Questions About Cinnamon Roll Bread
Can We Make This Without a Stand Mixer?
Yes.
A stand mixer makes kneading easier, but you can absolutely knead this bread by hand.
Use a lightly floured work surface and knead until the dough becomes smooth and elastic.
Can We Use Instant Yeast?
Yes.
You can typically mix instant yeast directly into the dry ingredients rather than proofing it separately.
Follow the yeast manufacturer’s instructions if they differ.
Why Did My Cinnamon Swirl Separate?
Large gaps often happen when you roll the dough too loosely or use too much filling.
Roll firmly and evenly.
Can We Use Bread Flour?
Yes.
Bread flour will create slightly more chew and structure.
All-purpose flour gives us a softer, more tender result.
Can We Skip the Glaze?
Certainly.
The bread is delicious without it.
But are we recommending skipping vanilla glaze?
Absolutely not. 😄
How Should Cinnamon Roll Bread Be Stored?
Keep the cooled bread tightly wrapped or stored in an airtight container at room temperature for approximately 2 days.
For longer storage, refrigerate or freeze it.
Warm slices briefly before serving to bring back that soft cinnamon-roll texture.
